Hello Everyone and Happy Fall! Just attended a gathering the other night and was a guest of Get out Hudson. We had a three-course meal with wine and heard Michael Colameco, of Food Talk on NewsTalk Radio 710, record his radio show live! It was held at the Liberty House Restaurant in Jersey City overlooking Manhattan and the Statue of Liberty. I've posted pictures of the view from our table and dessert. Yummy!

Ah, summer vacation on Cape Cod, my most favorite place in the world. The air and seafood are the freshest you can get. Welfleet oysters are one of my top five favorite things to eat. Not far behind are the sweet little neck steamers that are so abundant along with cod, swordfish, mussels and lobster. This is the only place in the country that makes traditional and heavenly New England clam chowder. Clams and potatoes are suspended in the thick and creamy goodness. It's heaven for the seafood lover and hell for anyone prone to gout or high cholesterol.

So, the other night my roommates were interested in learning a quick brunch recipe. So we experimented. We bought puff pastry dough and lined a 13x9x2-inch baking pan with it. We cooked it in a 350 degree oven for 10 minutes and took it out. Pricked it with a fork to deflate it and put it back in.

In the meantime, I whipped up eight eggs with a bit of milk, salt and pepper. We browned some mushrooms and shredded some cheese.

After the puff pastry was finished, we added the remaining ingredients and baked it for about 10-12 minutes. It was a egg strudel/casserole. I like the name strudel because it sounds better.

Of course you can add anything to the eggs, any vegetables, meats and cheeses. It's easy and cheap!
